Rich shortcrust pastry

    This rich shortcrust pastry is easy to prepare with 5 simple ingredients and is ready in less than 30 minutes. It makes a lot, but it's delicious pastry and freezes well. Great for savoury or dessert pies.

    Serves: 32 

    • 500g plain flour
    • 1 1/2 teaspoons salt, or more to taste
    • 350g butter
    • 3 eggs
    • 240ml cold water

    1. Mix flour and salt together in a large bowl. Rub butter into the flour mixture until it is the consistency of breadcrumbs.
    2. Lightly beat eggs together in a separate bowl; stir into butter-flour mixture. Add water and mix just until incorporated, using your hands to bring dough together.
    3. Turn dough onto a floured work surface and cut into 4 portions. Refrigerate dough for 15 to 30 minutes before using.
