Tomato and red lentil soup, the quick and easy way

    Tomato and red lentil soup is so easy to prepare and make in a soup making machine. Serve with bread or rolls pre-heated in oven.

    Serves: 6 

    • 7 medium tomatoes, quartered (or 1 tin of tomatoes)
    • 2 medium red onions, diced
    • 2 cloves garlic, sliced
    • 2 medium carrots, chopped
    • 120g red lentils
    • 2 tablespoons tomato puree
    • 1 vegetable stock cube
    • 1/2 teaspoon freshly ground black pepper
    • 1 good pinch dried mixed herbs
    • salt to taste

    1. Add all ingredients into soup maker, then add water to the 1.6 litre mark. Turn on and set on smooth for about 20 to 25 minutes.

    Lovely with freshly baked bread to soak up and wipe the bowl clean. I added a small pinch of dried chilly flakes just enough to warm you up on these cold winter days.  -  20 Dec 2016
