Fruity savoury fried rice

    A savoury fried rice with fruit, vegetables and meat. The fruit gives it a nice tang and the fruit juice stops the rice being too dry.

    Serves: 4 

    • 1 to 2 tablespoons sunflower oil
    • 100g roughly chopped onion
    • 200g cooked ham or bacon, chopped
    • 100g cooked peas
    • 100g diced apple
    • 700g cooked rice
    • 1 small tin pineapple chunks, drained and juice reserved
    • 2 to 3 hard boiled eggs, chopped
    • 200g tangy cheese, diced
    • 1 to 2 tablespoons soy sauce or Worcester sauce
    • salt and pepper to taste
    • apple sauce (optional)

    1. In a deep frying pan or wok, fry the onion in the hot oil till soft. Add the ham or bacon and the peas; cook for a minute, then add the apple. Cook and stir constantly.
    2. Ensure the rice grains are well separated before adding them to the pan. Cook for a couple of minutes and keep it all moving.
    3. Add the pineapple and a tablespoon or so of the juice, to ensure the rice doesn't get too dry.
    4. Ensure the mixture is heated through, then remove from the heat and quickly stir in the cheese, egg and seasonings. Add the apple sauce, or serve it to the side.


    This is a quick way of using leftover bacon, eggs and/or pork. Remember that the pineapple might be much hotter than the other ingredients when eating the fried rice. It's nice to have a little lemon juice in the apple sauce. You could also add any leftover veg, such as asparagus, diced sweet potato, potato, cauliflower, broccoli, etc.
