A let's-use-up-the-leftovers sort of dish

    This could be described as a breakfast bake (in the American tradition), or a quiche without pastry, or... you judge for yourself. You can use leftovers or cook from scratch, the choice is yours

    Serves: 4 

    • 3 to 4 eggs
    • 2 to 4 tablespoons milk, as needed
    • 1 large onion, diced and fried (optional)
    • 2 tablespoons diced bread
    • 3 to 4 tablespoons chopped bacon
    • 1 small tin pineapple chunks, drained
    • 2 to 3 apples, cored and diced
    • 1 to 2 tablespoons leftover vegetables
    • 1 to 2 tomatoes, diced

    1. Whisk together the egg and 2 tablespoons of milk. Add the fried onion and diced bread, ensure the bread is covered in the egg mix.
    2. Add the rest of the ingredients, except the extra milk. If the mixture is dry add the extra milk and possibly an extra egg if the mix is very thin. Quickly mix all the ingredients; don't overdo it or the cooked veg might go mushy.
    3. Grease a casserole dish and pour in the mixture.
    4. Bake at 210 C / Gas 6-7 until set. Remove and serve hot in wedges, or cold in slices.


    The amount of milk and possibly egg depends on the type of bread and vegetables used and can vary quite a bit, so you may need the extra egg to make sure it sets. Note to the chef, you can pour the pineapple juice over the finished bake, or you can drink it and if you add a little white rum, or something -- we won't be looking!
