Heavenly rose and chocolate cookies

    These are tried and tested and taste so divine. Luxury cookies good enough to give as presents.

    Ingredients
    Makes: 2 dozen

    • 170g butter or margarine
    • 300g sugar
    • 2 eggs
    • 2 tablespoons double cream
    • 75g rose petal preserve or rose spread
    • 270g plain flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 100g plain dark chocolate, finely chopped

    Method

    1. Preheat oven to 180 C / Gas 4. Line two trays with parchment.
    2. In a large microwaveable bowl add sugar and butter. On low power put in microwave for 20 seconds , mix then return for another 20 seconds.
    3. Allow sugar and butter mixture to cool a little, then add eggs and mix well. Add the cream and rose preserve until well combined, then set aside.
    4. In a medium bowl, sift the flour, baking powder and salt. Fold into the wet mixture, then add chocolate and mix. Put in freezer for 5 minutes so mixture hardens.
    5. Using a melon ball scoop, drop the dough on the prepared baking trays with 2 inch spaces between each. If you prefer bigger cookies use an ice cream scoop and leave 3 inches apart.
    6. Bake in the oven for 12 to 15 minutes, or until the cookies are light brown.

    Tip

    You can use chopped sultanas in place of chocolate.
