Colourful chicken paprika

    This is a quick meal to prepare and lovely to eat. Serve with rice or pasta. Enjoy with nice crusty bread to mop up the extra juices.

    Serves: 4 

    • 3 chicken breasts, cubed
    • 1 clove of garlic
    • 1 yellow pepper, chopped
    • 1 red pepper, chopped
    • 1 green pepper, chopped
    • 1 onion, chopped
    • olive oil
    • 3 tablespoons of paprika
    • 1 tin of chopped plum tomatoes
    • pinch of salt & pepper
    • 250ml of water

    1. In a large frying pan over medium high heat, cook the chicken, garlic, peppers and onion in a bit of olive oil until chicken is slightly browned.
    2. Add the tin of tomatoes to the pan, along with the paprika. Season to taste with salt and pepper. Add the water and bring to a strong simmer. Cook uncovered for 30 minutes.

    Very easy to make. Had a houseful of teenagers. They loved it. Very tasty was the general concenus. I added 1/4 cup of cream 5 minutes before serving. Topped it with shredded cheese & shallots.  -  02 Mar 2013  (Review from Allrecipes AU | NZ)
