Classic bread sauce

    A thick sauce to go with your Christmas dinner.

    Serves: 6 

    • 1 medium onion, peeled
    • 2 to 3 whole cloves
    • 3/4 pint whole milk
    • 3 to 5 black peppercorns
    • salt to taste
    • 15g butter
    • 85g breadcrumbs

    1. Stick the cloves in the onion (around the base).
    2. Place onion in a pan and add the milk, salt and peppercorns. Bring to the boil then simmer on very low for 20 minutes, watching it does not stick.
    3. Remove the peppercorns, then add the butter and breadcrumbs. Mix and cook very slowly for 15 minutes.
    4. Remove the onion and serve.
