Bourbon barbecue marinade

    This marinade is perfect for using as a glaze for barbecued meat, or as a beef jerky base. It's the perfect combination of sweet and barbecue flavours.

    Makes: 425 ml marinade, approximately

    • 180ml honey
    • 125ml bourbon whiskey
    • 60g butter
    • 1 splash vinegar
    • 1 tablespoon Worcestershire sauce
    • 2 tablespoons brown sugar
    • 1 tablespoon soy sauce
    • 2 teaspoons prepared mustard
    • 2 teaspoons garlic powder
    • 1 pinch paprika

    1. Put all the ingredients into a pan and bring to the boil whist stirring.
    2. Simmer the mixture for 3 to 5 minutes whilst stirring to boil off any alcohol.
    3. Leave to cool and pour over your meat to marinade.
