Easy peasy vegetable soup

    A smooth and rich soup made with carrots, onions, potatoes and garlic. Great for fussy eaters, and both vegan and vegetarian.

    Serves: 4 

    • 3 large potatoes
    • 3 large carrots
    • 1 to 2 white onions (to taste)
    • 3 cloves garlic
    • 1 1/2 vegetable stock cubes
    • coconut oil for frying
    • 700ml hot water, or as needed
    • pepper to taste

    1. Peel all the vegetables and top and tail them. Cut into equal sizes then chop the garlic very finely. Fry off in a saucepan with some oil over medium heat till starting to become soft.
    2. Combine the stock cubes and hot water to make up the stock, then add to the veg in the pan. Simmer till the veg is soft.
    3. Blend until smooth. I use a Vitamix but any handheld or counter top blender would work. Serve nice and hot.


    Usually keeps for about two days in the fridge and will hold up in the freezer well.
