    Homemade almond milk is quick and easy to prepare using 5 simple ingredients and is great for dairy-free or vegan lifestyles. This version tastes just like the ones you can buy in the supermarket because the tapioca flour and soy lecithin help give it some body, which is what homemade versions typically lack. Give it a good shake before serving.

    Serves: 4 

    • 950ml water, divided
    • 1 tablespoon tapioca flour
    • 35g unsalted almonds
    • 1 teaspoon soy lecithin granules
    • 1 dash vanilla extract

    Method
    Prep:10min  ›  Cook:3min  ›  Ready in:13min 

    1. Combine 240ml water and tapioca flour in a microwave-safe cup; heat in microwave until boiling, about 3 minutes.
    2. Combine tapioca mixture, remaining water, almonds, soy lecithin and vanilla extract in a high-powered blender; blend on high until smooth.
    3. Strain mixture through muslin cloth into a container. Keep refrigerated.

    Soy lecithin:

    You can buy soy lecithin granules online or in larger health food shops.

    This recipe gets an 'A' for effort. Adding the tapioca and soy lecithin help give it some body, which is what homemade versions typically lack- I'm thrilled it doesn't use carrageenan. My soy lecithin is in granule form, so I pulverized it before adding to the blender. The tapioca will settle some, so give it a good shake before serving.
