Dark chocolate and almond bites

    Toasted almond chunks are coated with smooth dark chocolate in this quick and easy Paleo-friendly snack.

    Serves: 20 

    • 50g almonds, crushed into chunks
    • 200g dark chocolate (over 50% cocoa solids)

    Prep:10min  ›  Cook:8min  ›  Extra time:10min setting  ›  Ready in:28min 

    1. Spread almonds in a large dry pan; toast over medium heat until starting to brown, 3 to 5 minutes. Pour almonds into a bowl.
    2. Melt chocolate in top of a double boiler over simmering water, stirring frequently and scraping down the sides to avoid scorching, about 5 minutes. Remove from heat; pour in almonds and stir until evenly coated.
    3. Drop spoonfuls of chocolate-almond mixture onto a plate lined with greaseproof paper.
    4. Chill until set, about 10 minutes.


    You can make these chocolates in silicone moulds if desired.

    Wow, what a good recipe - so easy and delicious. I didn't have the dark chocolate required so I used what I had, which was a mix of pure chocolate baking squares: bittersweet, semi-sweet and unsweetened. I waited a few minutes for the mixture to cool slightly so that they would keep a nice shape on the waxed paper. The only change I'd make next time is to increase the ratio of almonds to chocolate as the last few flattened out more because they had less nuts in them.     Great Recipe! I can always depend on AllRecipes for my Paleo Recipes! Also, for those that want more paleo recipes, I would check out this website, Cointary . com .
