Slow cooker lamb stew

    This lamb chop and vegetable stew is perfect for a cold winters night and quite inexpensive since it uses mutton neck chops. Ask your butcher for this cut of lamb.

    Ingredients
    Serves: 4 

    • 1 onion, chopped
    • 4 carrots, sliced
    • 150g mushrooms, sliced
    • 1 red pepper, chopped
    • 8 small potatoes, halved
    • 16 to 18 lamb neck chops
    • 250ml chicken stock
    • pinch of dried rosemary
    • pinch of dried oregano

    Method

    1. Place the vegetables, lamb neck chops, stock, rosemary and oregano into a slow cooker.
    2. Cook on Low for 6 hours, until lamb is tender, stirring occasionally.
    3. Serve with bread rolls or on a bed of mash.
