Healthy banana cocoa muffins

    This is super easy and delicious. If you're looking to use up those overripe bananas and you like healthy sweet treats then this is ideal.

    • 4 very ripe bananas
    • 125ml coconut oil
    • 3 tablespoons honey
    • 2 large organic eggs
    • 75g ground almonds
    • 4 tablespoons unsweetened cocoa
    • 1 teaspoon baking soda
    • 150g spelt flour


    1. Preheat the oven to 200°C/400°F/gas mark 6 and line a 12-bun muffin tin
    2. Mash the bananas and add to them the coconut oil, honey and beaten eggs and mix well
    3. In another bowl mix together the flour, ground almonds, cocoa and baking soda
    4. Spoon the dry ingredients into the wet taking time to fold them in between each spoonful or two so that the dry ingredients are fully combined
    5. Spoon the batter into prepared muffin cases (I find using an ice cream scoop the easiest and least messy way to fill the cases) then bake in the preheated oven for around 15-20 minutes
