Easy Chicken Jambalaya
All full of healthy ingredients which the whole family can enjoy and very easy to make.

1 Green pepper
1 Onion
1 Chopped tomatoes
Cajun spice
1 Microwave Pack Of Wholegrain rice with haricot beans & quinoa
1 Cup Of Frozen Sweetcorn
A Sprinkle Of Salt And Black pepper
2 Chopped Garlic Cloves
Chicken Stock
3 or 4 Chicken Breasts
Coconut Oil
Method
Cook chicken until brown in coconut oil
Chop up the green pepper, onion, garlic cloves and I a seperate pan cook until brown, then season with black pepper
Add the green pepper, onion, garlic cloves to the chicken dish. Then ass sweetcorn, the chopped tomatoes and brown rice
Season the chicken with Cajun spice, Salt And Black pepper
Finish with adding the chicken stock and leave to cook on low for an hour or two.
