Gluten free banana flax pancakes

    These flourless pancakes made with mashed banana, milled flaxseeds, eggs and cinnamon are easy to prepare for a gluten-free breakfast.

    • 1 ripe banana, mashed
    • 2 tablespoons milled flaxseeds, or more to taste
    • 4 eggs
    • 1 teaspoon baking powder
    • 1/2 teaspoon ground cinnamon
    • 1 tablespoon butter

    1. Mix banana and milled flaxseeds together in a bowl. Add eggs, baking powder and cinnamon; beat together until combined.
    2. Melt butter in a pan over medium heat. Drop small spoonfuls of pancake batter into the pan. Cook until bubbles form and edges look dry, 4 to 5 minutes per side.


    These pancakes will be very thin. You can make this recipe without flaxseed and the pancakes will still hold together.

    Recipe as written is great! I wouldn’t change a thing. It’s a great alternative to traditional pancakes that do not agree with my stomach.     I only used 2 eggs in this recipe, added 2 tablespoons of ground flax seed, and a dash of nutmeg. They tasted phenomenal. I will definitely make them again. My boyfriend is on a keto diet and we had been searching for a decent pancake recipe.
