    1. Place bacon in a large pan and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon on kitchen roll; slice into small pieces.
    2. Combine cauliflower, cream, butter, 1/2 teaspoon salt, 1/4 teaspoon pepper and garlic in a pot; bring to the boil. Cook until cauliflower is soft, 18 to 20 minutes.
    3. Transfer cauliflower mixture carefully to a food processor. Add sliced bacon and smoked Gouda cheese; blend until smooth and creamy. Season with salt and pepper.

I do not have a food processor, so I used my electric mixer. Otherwise I made no changes. It was tasty, and a nice accompaniment to the Light Herb Pork Loin. I may try it again.  -  05 Aug 2018  (Review from Allrecipes US | Canada)

This recipe is super easy and tasty! I mashed instead of putting in the food processor...tasted great but consistency would definitely have been better if blended like recipe suggested.  -  03 Aug 2018  (Review from Allrecipes US | Canada)

I used regular gouda, not smoked and doubled the cheese. It tastes pretty good, but its not great. My family did not care for the texture. I doubt I'll make this again.  -  23 Jun 2018  (Review from Allrecipes US | Canada)
