Quick and delicious spinach pie

    This spinach pie is so easy, and something that the whole family loves - thank god. Make it easier by buying the pastry case if you like.

    Makes: 1 pie

    • 1 savoury pastry case
    • 50g butter
    • 1 splash oil
    • 1 onion, finely chopped
    • 280g frozen spinach, thawed and squeezed dry
    • 1 big pot creme fraiche
    • 200g grated Parmesan cheese

    Prep:20min  ›  Cook:40min  ›  Ready in:1hr 

    1. In a frying pan over medium high heat, cook chopped onion in butter and oil until golden. Add spinach and cook for a couple of minutes. Remove from heat, then stir in creme fraiche and Parmesan.
    2. Pour spinach mixture into the pastry case. (You can cover it in a layer of filo pastry to make it look nicer, but my family love it either way.)
    3. Put it in the oven at 180 C / Gas 4 for 40 minutes until set and the pastry is golden.
