Vietnamese pho ga soup

    Pho ga, a Vietnamese chicken noodle soup, is topped with beansprouts, lime juice and chilli sauce for a deliciously spicy meal. You could also try adding fresh ginger and fish sauce to the soup and garnishing with basil and slices of jalapeno chilli pepper.

    Serves: 6 

    • 1 tablespoon vegetable oil
    • 1 small onion, chopped
    • 225g baby mushrooms, sliced
    • 4 cloves garlic, minced
    • 1.8L water, or as needed
    • 200g rice noodles
    • 8 teaspoons chicken stock granules
    • 2 cooked chicken breasts, shredded with a fork
    • 4 spring onions, sliced
    • 15g freshly chopped coriander
    • 140g beansprouts
    • 1 lime, sliced into wedges
    • 1 dash Sriracha hot chilli sauce, or more to taste

    1. Heat vegetable oil in a large saucepan over medium-high heat; saute onion, mushrooms and garlic until tender, 5 to 10 minutes. Add water, rice noodles and chicken granules to onion mixture; bring to the boil. Reduce heat to low.
    2. Mix shredded chicken, spring onions and fresh coriander into soup; simmer for 5 minutes more. Transfer soup to serving bowls and top with beansprouts, a squeeze of lime juice and hot chilli sauce.

    I thought this was an awesome, simple recipe. I added some other ingredients which I think made it more amazing and just as simple. I added tomatoes, curry, fish sauce, chicken stock, chili powder, and coconut milk. I sprinkled curry over my chicken and added to the broth.     Cora! Girlfriend. Way to make me look like a rockstar in the privacy of my own home (which is all that really matters to me). The only thing I did differently was BBQ/grill the chicken breasts before tossing them into the soup. To be perfectly honest? My thinking was, if this doesn't pan out at least the chicken will be on point. Well we loved it, all. I have THE world's pickiest (and most honest) hubby and he was raving. The lime and Sriracha ending are everything, don't leave them out. Same with cilantro. You know what?
