    About this recipe: This filling kale soup recipe with beans and tomato is quick and easy - it's ready to serve in 30 minutes.

    Serves: 2 

    • 1 tablespoon butter
    • 1 small onion, chopped
    • 475ml chicken stock
    • 1 small tomato, chopped
    • 200g chopped kale
    • 250g tinned white beans, rinsed and drained

    1. Melt butter in a pot over medium-high heat. Saute onion in hot butter until tender, 5 to 10 minutes. Stir chicken stock and tomato into onion.
    2. Heat soup to near-boiling; stir in kale until completely submerged. Cook until kale wilts, 3 to 5 minutes. Stir beans into soup and cook until heated through, another 2 to 3 minutes.
