Delicious sweet potato scones

    These quick and easy sweet potato and raisin scones are spiced with cinnamon and nutmeg.

    Ingredients
    Serves: 16 

    • 3 sweet potatoes, peeled and chopped
    • 375g self-raising flour
    • 1/2 teaspoon salt
    • 85g butter
    • 200g caster sugar
    • 145g raisins
    • 1 teaspoon ground cinnamon
    • 1 teaspoon ground nutmeg
    • 1/4 teaspoon ground allspice

    1. Preheat oven to 180 C / Gas 4.
    2. Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to the boil. Add sweet potato, cover and steam until tender, 8 to 10 minutes. Strain into a bowl and mash until smooth.
    3. Mix flour and salt together in a large bowl. Rub in butter until mixture is crumbly. Stir in sugar, raisins, cinnamon, nutmeg and allspice. Add mashed sweet potatoes; mix until dough comes together.
    4. Turn dough out onto a floured work surface; divide in half. Pat each half into a circle the size of a large dinner plate. Stamp out scones with a cutter or slice each circle into 8 wedges. Transfer scones to two baking trays.
    5. Bake in the preheated oven until lightly browned, about 20 minutes.
