Banana nut porridge

    This porridge is made with quinoa, porridge oats and oat bran for lots of fibre! It's also packed with banana, walnuts and brown sugar. It tastes just like a banana nut loaf cake!

    Ingredients
    Serves: 1 

    • 1/4 cup water
    • 1/4 cup reduced fat milk
    • 1 tablespoon quinoa
    • 1/2 small banana, sliced
    • 1 1/2 tablespoons rolled oats
    • 1 tablespoon oat bran
    • 1 pinch salt
    • 1 pinch ground cinnamon
    • 1 tablespoon walnuts, chopped
    • 1 teaspoon brown sugar
    • 1/4 teaspoon vanilla essence

    Method

    1. Stir the water, milk and quinoa together in a saucepan; bring to a gentle boil. Reduce heat to low and simmer 5 minutes or until the quinoa begins to soften. Stir in the banana, porridge oats, oat bran, salt and cinnamon. Cook, stirring frequently over low heat for 2 to 5 minutes or until the mixture thickens. Remove from the heat and stir in the walnuts, brown sugar and vanilla.

    THE best breakfast I've had in a long time. I only made two small changes and that's using one whole sliced banana and 1/4 cup fat free evaporated milk. Everything else I kept the same.     This was very good. I would use roasted ground flaxmeal over the oatbran for a more nutty flavor and cook the quinoa a bit longer. Also, using a really ripe banana cancels out the need to add any sugar. Topped with extra banana slices and an extra sprinkle of cinnamon and this was a really good start to the day.
