Spicy potato wedges

    Potato wedges seasoned with paprika, chilli powder and garlic powder are coated in breadcrumbs creating crispy potato wedges.

    Serves: 6 

    • 2 tablespoons paprika
    • 2 tablespoons olive oil
    • 1 tablespoon garlic powder
    • 1 tablespoon chilli powder
    • 1 teaspoon salt
    • 1 teaspoon freshly ground black pepper
    • 4 large potatoes, cut into wedges
    • 115g breadcrumbs

    1. Preheat oven to 200 C / Gas 6.
    2. Mix paprika, olive oil, garlic powder, chilli powder, salt and black pepper together in a bowl until marinade is smooth.
    3. Place potatoes in a baking dish; add marinade and rub into potatoes. Sprinkle breadcrumbs over potatoes and coat each wedge well.
    4. Bake in the preheated oven for 30 minutes. Reduce heat to 180 C / Gas 4 and continue cooking until wedges are tender enough to puncture with a fork, about 30 minutes more.

    Both my daughter and I liked the flavor of these, but the bread crumbs made them a bit too crumbly for us. Also, the process of making the marinade and rubbing it onto the potatoes is not something I would care to do again. I think I would take the advice of other reviewers and coat in oil and then just sprinkle the dry ingredients on, or toss in a bag to coat.
