Spicy garlic salmon

    This is an unbelievably delicious and quick salmon recipe. You can play around with the ingredients: add fresh basil leaves instead of the chilli or balsamic instead of the lemon juice. The wholegrain mustard is essential. You are guaranteed to love this one!

    Serves: 2 

    • 2 cloves garlic, crushed
    • 1 dried red chilli pepper
    • 1 tablespoon olive oil
    • 1 teaspoon wholegrain mustard
    • 2 tablespoons fresh lime juice
    • sea salt to taste
    • freshly ground black pepper
    • 2 (175g) salmon fillets

    1. Preheat oven to 200 C / Gas 6. Line a medium-sized baking dish with foil. Lightly grease foil.
    2. With a mortar and pestle, grind together the garlic, chilli pepper and olive oil. Mix into a thick paste with the mustard, lime juice, salt and pepper. Place the salmon fillets in the prepared baking dish and coat with the paste mixture.
    3. Bake salmon 12 to 15 minutes in the preheated oven, or until fish is easily flaked with a fork.

    This was good. I did not pre-heat the oven and put the fish in for 25 min, it was a bit to long, leaving the fish dry. I will make again but start checking around 18-20 min.  -  31 Dec 2006  (Review from Allrecipes US | Canada)


    I love salmon and added this to my "200 ways to cook salmon" list. The recipe needs to be corrected. As one reviewer noted, 25 min is too long to bake this dish.
