This is an extremely easy potato dish to serve warm with other salads for a buffet or BBQ party. I've made it dozens of times for family and friends and have been asked for the 'recipe' time and again. If desired you can make your own mayo but I just use a good quality jar. Always use the freshest mint you can find. Sorry to be a little vague with the ingredients but it really does depend on how many you're serving and how minty you want your mayonnaise to taste. I've made enough to serve over 25 people for a summer buffet and it still wasn't enough as most came back for seconds!
