Minted mayonnaise potatoes

    This is an extremely easy potato dish to serve warm with other salads for a buffet or BBQ party. I've made it dozens of times for family and friends and have been asked for the 'recipe' time and again. If desired you can make your own mayo but I just use a good quality jar. Always use the freshest mint you can find. Sorry to be a little vague with the ingredients but it really does depend on how many you're serving and how minty you want your mayonnaise to taste. I've made enough to serve over 25 people for a summer buffet and it still wasn't enough as most came back for seconds!

    Serves: 10 

    • 1 to 3 tablespoons of finely chopped fresh mint leaves
    • 2 to 4 tablespoons mayonnaise, or enough to coat the potatoes
    • 1kg new potatoes either in their skins or scraped, or enough to suit your needs

    1. Add the finely chopped mint to the mayonnaise and mix thoroughly. Leave for half an hour or more in the fridge to allow the mayo to absorb the mint flavour.
    2. Boil the potatoes until tender, drain well.
    3. While the potatoes are still fairly hot, add the minted mayonnaise and toss to cover evenly.
    4. Place the potatoes in a casserole type dish with cover to keep warm until needed.
