Honey heart carrots

    Nothing says 'I love you' like veggies! These heart shaped carrots can be served as a side dish on Valentine's day to your loved one or the kids! Also nice if you add them to 'get well' soups!

    Serves: 4 

    • 4 large carrots
    • 2 tablespoons butter
    • 2 tablespoons honey

    1. Lay the carrots on the chopping board and cut off the top and bottom ends. Cut out a "V" shape down the length of the carrot, only as deep as the core.
    2. Using your vegetable peeler, round out the top of the hearts with one or two peels. Then down the side, peeling at an angle to make a heart shape, 2 to 4 peels per side. Once you have reached the heart shape you desire, slice each carrot into 'hearts' of your desired thickness.
    3. Place in a saucepan of boiling water and cook until tender, about 8 minutes then drain. Stir in butter and honey. Enjoy!

    For soups and stews:

    If you are using these in soups and stews, just stop after step 2, then add to your recipe when carrots are called for.
