Crepes with chocolate cream and chocolate sauce

    These crepes are the perfect Valentine's Day surprise! The crepes, chocolate-cream filling and chocolate sauce can be made a few days ahead and assembled a few hours before serving.

    Ingredients
    Serves: 15 

    • Crepes
    • 2 eggs
    • 120ml milk
    • 120ml water
    • 100g plain flour
    • 6 teaspoons caster sugar
    • 1/3 tablespoon butter or margarine
    • 2 tablespoons cognac
    • Chocolate filling
    • 1 packet Angel Delight® chocolate dessert
    • 1 teaspoon instant coffee granules
    • 700ml whipping cream
    • Chocolate sauce
    • 120g dark chocolate
    • 120g butter
    • 300ml evaporated milk
    • 300g icing sugar

    Method

    1. For the crepe batter: Mix eggs, milk, water, flour, sugar, 1 teaspoon butter and cognac together in a large bowl.
    2. For the chocolate filling: Beat Angel Delight®, instant coffee and whipping cream together with an electric mixer until the mixture is thick.
    3. For the chocolate sauce: Melt the chocolate, butter, evaporated milk and icing sugar together until the mixture is a little thick.
    4. To cook the crepes: Heat a small pan to a high temperature. Place a small amount of the crepe batter into the pan and swirl it around until the batter covers the bottom of the pan. When the crepe is slightly browned flip the crepe over and let the other side brown for a few seconds. The first crepe will most likely not turn out well, but the rest will. Stack the crepes on top of each other; allow to cool before filling.
    5. Spoon the filling into the centre of each crepe and roll the crepe up around it. Spoon the sauce over the crepes and serve.

    These were fabulous! I made them for Valentine's Day and my husband went nuts. You know it's good when they "mmm" after each bite. They were somewhat time consuming, but I did it in 3 stages (in between housework, picking my son up from school, etc.): filling (then refrigerated), crepes (also refrigerated-I put a piece of plastic wrap between each crepe), and the sauce right before serving.     My 13-year old sister made these and they were delicious! My husband didn't care for the mocha taste so you may want to eliminate the coffee granules, but I thought they were awesome!  -  13 May 2002  (Review from Allrecipes US | Canada)

    I made these last weekend...they were yummy...a little sweet, so I would probably use them as a dessert in the future....instead of a breakfast item...also i left out the cognac...and they were still really tasty...very rich.  -  23 Apr 2002  (Review from Allrecipes US | Canada)
