Easy comforting Sunday beef pot

    5 hours 30 min

This slow cooker beef pot roast is not expensive to make but tastes so good. For four servings use braising steak and cook in a slow cooker for 5 hours or more. Put it in the slow cooker after Sunday breakfast and by Sunday lunch it will be so delicious. Serve with chunks of your favourite bread (and butter) to mop up the lovely gravy. A bowl of love served to the family!

    Serves: 4

    • 650g braising steak, cut into good size cubes
    • 2 tablespoons of flour seasoned with salt and pepper
    • 1 tablespoon of oil of your choice
    • 2 large carrots, sliced
    • 1 onion, diced
    • 1 pint of hot beef stock with a teaspoon of mixed dried herbs
    • 1 tablespoon of Worcester sauce
    • 1 tablespoon tomato puree or tomato ketchup
    • 3 large potatoes, sliced about 1cm thick
    • pinch of salt and pepper, to taste

    1. Toss the steak in the seasoned flour. Heat oil in a frying pan; add beef in batches and brown on all sides. Transfer to the slow cooker.
    2. Add sliced carrots and diced onion to the same pan you cooked the beef. Cook and stir for 1-2 minutes.
    3. Add the stock with herbs, Worcester sauce, tomato puree and any leftover seasoned flour.
    4. Pour this mixture on top of the beef in the slow cooker; top with the sliced potatoes, making sure they are just below the liquid. Sprinkle a pinch of salt and pepper on top and cook for 5 to 6 hours on High.

If you don't have a slow cooker, cook on the hob at a very low heat for 2-3 hours but check the liquid and add more stock if it looks dry. You could also use a microwave and cook on low for 90 minutes but this will make the dish have much more liquid as the microwave will not allow the meat and vegetables to absorb as much juice.
