Spinach and ham frittata

    This egg, spinach, ham, red pepper, onion and feta cheese frittata is a great choice for a weekend breakfast or brunch.

    Ingredients
    Serves: 4 

    • 2 tablespoons olive oil
    • 75g red pepper, sliced into matchsticks
    • 80g chopped onion
    • 3 eggs
    • 120ml milk
    • 275g frozen chopped spinach, thawed and squeezed dry
    • 125g chopped cooked ham
    • 60g grated mozzarella cheese
    • 75g feta cheese, crumbled
    • 1/2 teaspoon salt
    • 1/4 teaspoon freshly ground black pepper

    Method

    1. Heat olive oil in a pan over medium heat. Cook and stir red pepper and onion in hot oil until soft, about 5 minutes.
    2. Beat eggs and milk together in a bowl until smooth; add spinach, ham, mozzarella cheese, feta cheese, salt and black pepper. Gently stir to mix evenly; pour into the pan.
    3. Place a cover on the pan and cook until the egg mixture is completely set in the centre, 7 to 10 minutes. Cut into wedges to serve.
