Slow cooker chilli

    I created this slow cooker chilli con carne recipe by combining a number of recipes I'd tried on this site and a recipe from Jamie Oliver. Serve with crusty bread or on a bed of rice.

    Serves: 4 

    • 500g beef mince
    • 1 large green pepper, chopped
    • 1 large onion, diced
    • 2 cloves garlic, minced
    • 100g carrot, chopped
    • 1 (400g) tin kidney beans, drained
    • 1 (400g) tin beans in chilli sauce
    • 1 (400g) tin chopped tomatoes
    • 70g tomato puree
    • 1 teaspoon chilli powder
    • 1/2 teaspoon cayenne pepper
    • 1/2 teaspoon paprika
    • 2 teaspoons ground cumin
    • 1 teaspoon cinnamon
    • salt and pepper, to taste
    • soured cream, to serve
    • chopped spring onions, to serve
    • grated cheese,to serve

    1. Fry the beef mince in a dry frying pan until browned.
    2. Transfer into slow cooker; add chopped pepper, onion, carrot, beans, tomatoes, tomato puree and spices. Stir well.
    3. Cook for 6 hours on High or 8 hours on Low.
    4. Serve the chilli piled high in bowls, topped with a spoonful of soured cream, grated cheese and sliced ​​spring onions.
