Florida Chicken Salad

    • red and green grapes 4 stalks of celery
    • 2 chicken breasts
    • 1/2 jar of helmans mayo add more as needed
    • 1/4 teaspoon paprika
    • pinch salt 1/4 teaspoon of pepper adjust to taste
    • teaspoon oregano, 1/2 of rosemary, pinch of all purpose seasoning
    • whole melon


    1. cook of the chicken but don't over cook it needs to be moist and juicy
    2. wash and cut grapes thinly cut celery
    3. mix all dry ingredients in the mayo, it needs to be a firm consistency
    4. place in fridge for thirty mins
    5. cut cooked chicken into small pieces
    6. add the chicken to the wet mixture and mix well making sure that all the ingredients and chicken are coated well
    7. cut melon in half scoop out the seeds and place a good scoop of the mixture onto the melon.


    this is also good and a bed of fresh lettuce, or in sandwiches or crispy bread roll ENJOY
