Carrot and walnut bars

    This spiced carrot, raisin and walnut traybake has a hint of orange and tastes a bit like carrot cake.

    • 275g grated carrots
    • 150g raisins
    • 240ml water
    • 150g caster sugar
    • 120ml orange juice
    • 3 tablespoons butter
    • 1 1/2 teaspoons ground cinnamon
    • 1 teaspoon ground cloves
    • 1 teaspoon ground nutmeg
    • 240g wholemeal flour
    • 1 egg
    • 2 teaspoons bicarbonate of soda
    • 1/4 teaspoon salt
    • 115g chopped walnuts

    1. Preheat oven to 160 C / Gas 3. Grease a traybake tin or baking dish.
    2. Combine carrots, raisins, water, sugar, orange juice, butter, cinnamon, cloves and nutmeg in a small saucepan; bring to the boil. Reduce heat to low and simmer until slightly reduced, about 5 minutes. Pour carrot mixture into a large bowl and cool to lukewarm, 15 to 20 minutes.
    3. Stir flour, egg, bicarbonate of soda and salt into carrot mixture until cake batter is well mixed; fold in walnuts. Pour cake batter into the prepared tin.
    4. Bake in the preheated oven until a skewer inserted in the centre comes out clean, about 25 minutes.
    5. Allow to cool before slicing into bars or squares.

    I wouldn't say that these taste like carrot cake, but I will say that they taste good. Nice blend of spices, the carrots & raisins bring some moisture to the somewhat dense bars, and the OJ brightens the flavor just a little. After taking the photo, I drizzled Yogurt Glaze from this site over the bars, and that brought them up to a 5-star recipe IMO. Enjoyed!  -  13 Sep 2014  (Review from Allrecipes US | Canada)
