Vegan orange pancakes

    These vegan pancakes are made with milled flaxseed and orange juice in place of eggs and milk.

    • 250g wholemeal flour
    • 2 tablespoons baking powder
    • 2 tablespoons milled flaxseed
    • 500ml orange juice
    • 1 teaspoon orange extract

    1. Whisk flour, baking powder and milled flaxseed together in a bowl; stir orange juice and orange extract into flour mixture until pancake batter is well-combined.
    2. Heat a lightly oiled non-stick pan or griddle over medium-high heat.Drop pancake batter by large spoonfuls onto the pan and cook until bubbles form and the edges are dry, 3 to 4 minutes. Flip and cook until browned on the other side, 2 to 3 minutes. Repeat with remaining pancake batter.
