French vanilla madeleines

    This recipe makes 32 soft madeleines with a generous hint of vanilla. Enjoy! They are best when warm and can be served dipped into melted chocolate.

    Makes: 32 madeleines

    • 100g butter
    • 3 eggs
    • 150g caster sugar
    • 2 teaspoons vanilla extract
    • 50ml milk, divided
    • 200g plain flour
    • 8g baking powder

    1. Preheat the oven to 220 C / Gas 8.
    2. Melt the butter in a saucepan over low heat and then set aside.
    3. Beat the eggs with the sugar, until the mixture becomes pale. Then add the vanilla extract and 40ml of the milk. Stir well, then add the flour and the baking powder.
    4. Stir in the butter and the rest of the milk. Let the mixture rest for 15 minutes. This is important if you want the madeleines to shape well.
    5. Meanwhile, grease your madeleine mould. Once done resting, spoon mixture into prepared mould.
    6. Bake in the preheated oven for 5 to 10 minutes, until the madeleines are risen and golden brown.
