Spinach, bacon and avocado salad

    A lovely salad for weekend brunch or lunch. Spinach, avocado, hard-boiled eggs, bacon and croutons - delish!

    Serves: 4 

    • 250g spinach leaves
    • 1 avocado
    • 2 hard boiled eggs, sliced into 8ths
    • 3 tablespoons French dressing
    • 1 tablespoon olive oil
    • 175g bacon, rind removed, sliced into strips
    • 1 small clove garlic, minced
    • 1 tablespoon cider vinegar
    • 250g croutons

    1. Trim stalks from spinach and put leaves into salad bowl.
    2. Halve the advocado, remove skin and slice into a small bowl. Add the French dressing and toss until well coated. Add to spinach in salad bowl.
    3. Fry the bacon in the olive oil until cooked; stir in chopped garlic and heat through. Remove bacon and garlic from pan with a slotted spoon and toss into salad.
    4. Add the cider vinegar to the pan and stir to dissolve any juices; pour over salad.
    5. Arrange the egg slices and croutons on top of the salad. Enjoy!
