Fennel coleslaw

    Triple sec liqueur adds a hint of sweet orange flavour to a colourful slaw made from red and green cabbage, thinly sliced fennel and a sprinkle of pine nuts.

    • 120ml apple cider vinegar
    • 135ml triple sec liqueur
    • 1 teaspoon salt
    • 275g shredded green cabbage
    • 150g shredded red cabbage
    • 175g thinly sliced fennel bulbs
    • 1 sweet onion, thinly sliced
    • 75g pine nuts

    1. Whisk apple cider vinegar, triple sec liqueur and salt together in a salad bowl, stirring to dissolve salt. Toss green cabbage, red cabbage, fennel and onion in the dressing until coated. Chill for at least 30 minutes. Sprinkle coleslaw with pine nuts to serve.

    This is a nice option to your standard cole slaw. It's really light with a mild flavor. All ingredients are harmonious, not one dominating. I did toast the pine nuts to maximize their flavor, and you can enjoy this guilt free.  -  11 Oct 2015  (Review from Allrecipes US | Canada)
