Chicken in a creamy sauce

    Chicken in a creamy garlic sauce with peppers, onions and mushrooms. Really easy and tastes so yummy!

    Ingredients
    Serves: 2 

    • 2 teaspoons oil
    • 2 chicken breasts, cut into strips
    • 4 to 5 mushrooms, chopped
    • 2 peppers, chopped
    • 1 onion, chopped
    • chopped garlic, to taste
    • 220ml double cream
    • 220ml chicken stock
    • salt and pepper to taste

    Method

    1. Gently fry chicken in the oil until it starts to colour. Add mushrooms, onions and peppers (and garlic, if using); cook and stir for 2 minutes. Pour in cream and bring to a simmer. Simmer for 5 minutes, then add the stock, salt and pepper. Simmer for 30 minutes, partially covered.
