Salat yirakot

    This Israeli salad has tomatoes, red and green peppers, cucumbers, red onion and lots of fresh herbs. It has a simple dressing of olive oil, garlic, lemon juice and sumac.

    Serves: 4 

    • 2 tomatoes, diced
    • 2 green peppers, diced
    • 1 red pepper, diced, or more to taste
    • 1/2 cucumber, diced
    • 120ml olive oil
    • 1/2 red onion, diced
    • 2 scallions, chopped
    • 2 tablespoons lemon juice
    • 1 tablespoon chopped fresh parsley, or to taste
    • 1 tablespoon chopped fresh mint, or to taste
    • 1 tablespoon chopped fresh dill, or to taste
    • 2 teaspoons vinegar
    • 2 cloves garlic, minced
    • 1/2 teaspoon ground sumac
    • salt and ground black pepper to taste

    1. Combine tomatoes, green peppers, red pepper, cucumber, olive oil, red onion, scallions, lemon juice, parsley, mint, dill, vinegar, garlic, sumac, salt and pepper in a large bowl; mix thoroughly.
    2. Chill salad until flavours combine, about 25 minutes.
