Mint-tomato sauce

    Perfect for lamb! Fresh tomatoes and mint are mixed with extra virgin olive oil and white wine vinegar in this refreshing sauce.

    Serves: 6 

    • 160ml extra-virgin olive oil
    • 60ml white wine vinegar
    • 1 teaspoon salt
    • freshly ground black pepper to taste
    • 2 teaspoons Dijon mustard
    • 1/2 teaspoon caster sugar, or to taste
    • 10g freshly chopped mint
    • 2 plum tomatoes, chopped

    1. Whisk together the olive oil, vinegar, salt, pepper, Dijon mustard and sugar in a large bowl. Stir in the mint and tomatoes.

    I had to rate this a 5!! It is a wierd sounding recipe, but since odd flavors sometimes blend well, I tried it for an Easter lamb roast and once my guest started using the sauce, they couldn't stop!     I was in charge of a Seder Meal and made 110 lbs of roasted lamb and knew I wouldn't have time to deglaze pans and make a gravy so with the great reviews on this sauce I made a million or so batches and wow what a hit.
