Roasted cauliflower with dates and pine nuts

    Roasted cauliflower tossed in butter and garlic with pine nuts and Medjool dates. A fancy way to dress up cauliflower for a quick side dish!

    Ingredients
    Serves: 4 

    • 1 head cauliflower, cut into florets
    • salt and ground black pepper to taste
    • 55g unsalted butter
    • 45g pine nuts
    • 75g coarsely chopped Medjool dates
    • 1 clove garlic, minced

    Method
    Prep:10min  ›  Cook:30min  ›  Ready in:40min 

    1. Preheat oven to 220 C / Gas 7.
    2. Spread cauliflower florets on a baking tray; season with salt and pepper.
    3. Bake in the preheated oven for 10 minutes. Stir cauliflower and continue baking until golden brown around the edges, about 20 more minutes.
    4. Heat butter in a small pan over medium-low heat; cook and stir pine nuts until golden brown, about 5 minutes. Add dates and garlic to pine nuts; cook until dates are softened, 2 to 3 minutes. Season with salt.
    5. Transfer hot cauliflower to a serving bowl. Drizzle pine nut mixture over cauliflower and toss to coat. Serve warm or at room temperature.

    Loved this recipe. Just substituted dried cranberries for the dates since I like them better. Even my guests who don't like cauliflower loved it. Roasting veggies always improves the taste for some reason  -  11 Jul 2016  (Review from Allrecipes US | Canada)

    So so delicious and simple to make too! Roasting cauliflower is my favorite way to prepare it, but this butter nutty and sweet topping takes it to a whole other level of yum! This would be perfect to serve to guests as it's very impressive.
