Egg bhurji (Indian scrambled eggs)

    Egg bhurji, scrambled eggs seasoned with garam masala, turmeric and coriander, is an Indian-inspired way to eat eggs for breakfast. Eat with naan or pitta bread.

    Serves: 2 

    • 60ml vegetable oil
    • 1 teaspoon garam masala
    • 1 teaspoon ground turmeric
    • 1 teaspoon ground coriander
    • salt to taste
    • 80g finely chopped onion
    • 3 green chilli peppers, sliced
    • 2 large eggs

    Prep:5min  ›  Cook:10min  ›  Ready in:15min 

    1. Heat oil in a pan over medium heat; add garam masala, turmeric, coriander and salt. Add onion and chilli peppers; cook and stir in the seasoned oil until onion is slightly tender, about 5 minutes.
    2. Crack eggs into the pan and season with salt; cook and stir until eggs are set and scrambled, about 5 minutes.

    The spice combination in this recipe is yummy. As suggested, I had my eggs with buttered toasted bread and a cup of chai. I did have to make substitutions: I didn't have green chiles, only habaneros and bell peppers. I used a bit of both to even out the heat.     I love trying new recipes! The flavor combo worked although a full tablespoon of spices seemed a bit heavy. Next time I'll reduce it to a 1/2 teaspoon of each spice. The eggs were slightly dry after cooking a full 5 minutes. I added fresh cilantro, tomatoes and ate it in a pita. Delicious! The tomatoes and cilantro help cut some of the dryness and heavyness from the spices. I'll be making this again with just a few adjustments to suit my taste.     thank you posting this it got me started ... I made a brianni rice in the pressure cooker used 4 eggs added 1/4 tsp black pepper and cut the other spices down to 1/2 tsp. added two cloves garlic and cilantro and green onion....after all that it's a nice dinner bowl!  -  10 Apr 2018  (Review from Allrecipes US | Canada)
