    About this recipe: These chocolate chip cookies are made with coconut oil instead of butter for a modern rendition of the classic that everyone will love! You can make them dairy free if you use dark chocolate chips with no dairy listed on the label.

    Ingredients
    Serves: 12 

    • 70g coconut oil
    • 50g soft brown sugar
    • 50g caster sugar
    • 1 egg
    • 1 teaspoon vanilla extract
    • 190g plain flour
    • 1/2 teaspoon bicarbonate of soda
    • 1/2 teaspoon salt
    • 85g milk chocolate chips
    • 20g old-fashioned oats

    Method

    1. Preheat oven to 170 C / Gas 3. Line a baking sheet with parchment.
    2. Combine coconut oil, brown sugar and caster sugar in a large bowl; beat with an electric mixer until creamy. Beat in egg and vanilla.
    3. Mix flour, bicarb and salt together in a bowl. Gradually beat into the coconut oil mixture until just blended. Fold chocolate chips and oats into the dough.
    4. Roll 2 tablespoons of dough into a ball. Place on the prepared baking sheet. Repeat with remaining dough, spacing balls about 5cm apart.
    5. Bake in the preheated oven until cookies are golden on the bottom, 12 to 14 minutes.

    rjsilvester Yes coconut oil has saturated fat but is a different type, it's molecular structure is different and it actually lowers cholesterol. That's why it's a health food.  -  21 Mar 2017

    COCONUT OIL HAS OVER TWICE THE AMOUNT OF SATURATED FAT AS MOST BUTTER AND OILS. SO NOT FOR ANYONE LOOKING AFTER THEIR HEART.  -  20 Mar 2017
