Slow cooker chicken and tomato stew

    A slow cooker is the easiest way to make a great chicken stew, packed with vegetables, which you can serve with mashed potatoes, rice or pasta.

    Serves: 6 

    • 6 chicken breast fillets, cut into chunks
    • 1 onion, diced
    • 2 cloves garlic, finely chopped
    • 2 carrots, sliced
    • 3 celery stalks, diced
    • 2 red or green peppers, diced
    • 12 button mushrooms, sliced
    • 2 courgettes, diced
    • 1 (500g) jar pasta sauce or tomato passata

    1. Place chicken breast, diced onion, chopped garlic, sliced carrots, diced celery, diced peppers, sliced mushrooms and diced courgettes into the bowl of a slow cooker. Pour over pasta sauce and stir well. Cover and cook on Low for 7 to 9 hours.

    Used different ingredients. This is a great basic recipe, but I found it a bit bland & watery. I tried again & scaled it for 4 servings, used a small jar of pasta sauce, which made a nice thick sauce.     This is a great recipe. Use a good brand of pasta sauce, add lots of garlic and peppers and you'll have a restaurant quality meal. IMPORTANT NOTE: If you use boneless, skinless breasts (as I did), only cook for about 4 to 5 (max) hours on LOW or else your chicken's texture will be like tinned.  -  18 Jul 2008  (Review from Allrecipes AU | NZ)


    Used different ingredients. I rate this recipe 4 stars. Someone ought to edit it to indicate the needed amount of salt (which has been left out of the list of ingredients).
