Slow cooker spicy lentil and tomato soup

    A lovely hearty, thick soup for cold winter days. Absolutely no fat, so you can have a mug of this soup any time of the day - I used this soup when I was detoxing for a week and never felt hungry. I made double the amount and it was enough for the weeks detox.

    Serves: 4 

    • 125g red lentils
    • 1 medium onion, peeled and chopped
    • 1 large carrot, peeled and chopped
    • 1 (400g) tin chopped tomatoes
    • 1 vegetable stock cube
    • 1/2 to 1 teaspoon chilli powder
    • a pinch sea salt
    • a pinch freshly ground black pepper

    1. Add the lentils, chopped onion and carrot to the slow cooker.
    2. Add the chopped tomatoes and two tins of water (800ml).
    3. Add the crumbled stock cube, salt and pepper. Finally, add the chilli powder to suit your taste.
    4. Place lid on cooker and turn on to High; cook for an hour. Reduce the heat to Low and cook for another 6 hours.
    5. Ladle into bowls and serve with crusty bread.
