Honey-sweetened granola


    This simple granola made with oats, coconut and pecan nuts is sweetened with honey instead of sugar.

    Serves: 20 

    • 325g porridge oats
    • 2 tablespoons plain flour
    • 25g desiccated coconut
    • 25g chopped pecans or other nuts
    • 1/2 teaspoon ground cinnamon
    • 120ml honey
    • 60ml coconut oil
    • 1/2 teaspoon vanilla extract

    1. Preheat oven to 160 C / Gas 3. Lightly grease a rimmed baking tray.
    2. Mix oats, flour, coconut, pecans and cinnamon together in a large bowl. Stir in honey, coconut oil and vanilla extract until evenly incorporated.
    3. Spread mixture on the prepared baking tray.
    4. Bake in the preheated oven until lightly golden, about 10 minutes. Stir gently. Continue baking, stirring every 5 minutes, until golden brown, 10 to 15 minutes. Let cool until crispy, about 15 minutes. Store in airtight container.
