Lenten Chili

    A recipe I put together during Lent - filling and tasty, and very spicy!

    • 2 tins of chili beans (approx 400g)
    • 1 tin of canneloni beans (approx 200g)
    • 5 medium tomatoes
    • 1 tbsp tomato paste
    • half a red onion
    • 5 garlic cloves
    • fresh Basil leaves to taste
    • Colman's Chili Con Carne


    1. Soften the chopped onion and garlic in a large pan.
    2. Add the three cans of beans, along with a small amount of the liquid that comes with them.
    3. Add the chopped tomatoes. Simmer for about 5 mins.
    4. Add the packet of Chili spice, the tomato paste and the fresh basil. Cover and cook for about 30 mins on a low heat.
    5. Serve with green veg or garlic bread, or just enjoy American-style with a big spoon!
