Easy mini strawberry cream treats

    After making Millefeue for a party and somebody tucking into it, I had to whip up something last minute. These went down amazingly and I've had them requested over and over again since. They're so easy, they're the perfect bite sized little treats and you really don't need to be precise with measurements just do it to suit your tastes.

    • 1 pack Store bought puff pastry
    • 600ml tub Double Cream
    • Vanilla Extract
    • Jar of Strawberry jam
    • Punnet of Strawberries
    • Icing sugar


    1. Preheat oven to 180c or less for fan, dust your surface with icing sugar and roll out your puff pastry thinly to approx 1/2 cm thick.
    2. Use a plastic/metal cutter to cut out circles, dust with icing sugar and place them onto a non stick baking tray. Put them in the oven until golden and icing sugar is dissolved. Leave to cool
    3. Empty Double cream into a bowl and whip until thick, add vanilla extract to taste. Cut the strawberries into medium slices.
    4. Pastry circles should be puffed up to a nice size, take them and pull them apart to make a top and bottom
    5. Spread the bottom half with a little of the jam, you don't need a lot. Add a scoop of the cream, pop a couple of slices of strawberry on top and add the lids.
    6. Enjoy!
