Lemon and coriander avocado toast

    Avocado on toast with lemon and coriander is topped with chia seeds for a tasty and satisfying breakfast, lunch or snack. I like to use this recipe when I have a ripe avocado that I don't want to waste. It is absolutely delicious! Feel free to get creative with the ingredients - substitute coriander with mint or parsley, or chia seeds with sesame or poppy seeds.

    Serves: 2 

    • 1/2 avocado
    • 2 tablespoons chopped fresh coriander, or more to taste
    • 1 teaspoon lemon juice, or to taste
    • 1/4 teaspoon lemon zest
    • 1 pinch cayenne pepper
    • 1 pinch fine sea salt
    • 2 slices granary bread, toasted
    • 1/4 teaspoon chia seeds

    1. Mash avocado in a bowl; stir in coriander, lemon juice, lemon zest, cayenne pepper and sea salt. Spread avocado mixture onto toast and top with chia seeds.

    Very nice mix of flavors. We did not have chia seeds. Used ground pumpkin seeds. Our fresh lemon overpowered the other flavors, so we will try again with less lemon and more of the other ingredients. Definite plus to our breakfast options.
