Roasted asparagus with Parmesan

    Asparagus is topped with fresh Parmesan and roasted in the oven until the spears are soft and the cheese has melted. Simple and delicious!

    Serves: 4 

    • 450g fresh asparagus, tough ends trimmed
    • olive oil for drizzling
    • 20g freshly grated Parmesan cheese
    • 1 teaspoon sea salt
    • 1/4 teaspoon garlic powder, or to taste

    1. Preheat oven to 200 C / Gas 6.
    2. Lightly grease the inside of a casserole dish. Place asparagus spears in the dish; drizzle a little olive oil over the spears. Sprinkle Parmesan cheese, sea salt and garlic on top.
    3. Roast in preheated oven until fork easily punctures thickest part of stem, about 12 minutes.
