Unblemished Banana Bread

    The most delicious banana bread in the world. Would definitely bring it for long car journeys with the kids in the back!

    • 4 bananas(ripened)
    • 140g unsalted butter(softened, plus extra for tin)
    • 140g caster sugar
    • 140g self-raising flour
    • 2 large eggs(beaten)
    • 1 tsp baking powder


    1. Heat oven to 180C/Gas fan 1 and line a loaf tin with greaseproof paper. Butter it.
    2. Mash up the bananas.
    3. Cream the sugar and butter until light, then slowly add the eggs.
    4. Next, pour in the flour, baking powder and bananas. Mix well for 5 minutes and then pour the mixture into the tin.
    5. Bake well for 25-30 minutes, and when you take it out of the oven, poke a skewer in the bread. If it comes out clean, cool for 2 hours. If not, put it back in the oven until ready.
    6. EAT! If you are taking it on a car journey (which I advise you to) slice then pack with tinfoil.


    if the skewer does not come out clean, but the top of the bread looks good and golden, put a sheet of tinfoil over the top so it will not become burnt.
