Mum's malt loaf

    Simply the best malt loaf, easy, never fails. Delicious warm from the oven, sliced with butter. I've made for friends many times. Lots of friends have asked for the recipe so I thought I'd share it on here for everyone to enjoy.

    Makes: 1 loaf

    • 7 1/2 fl oz brewed tea
    • 8 oz sultanas
    • 4 oz sugar
    • 1 egg
    • 8 oz self raising flour

    Prep:20min  ›  Cook:45min  ›  Extra time:3hr  ›  Ready in:4hr5min 

    1. Combine tea, sugar and sultanas. Leave to sit overnight, or at least 3 hours.
    2. Preheat oven to 180 C / Gas 4. Grease a 1 lb loaf tin.
    3. Whisk egg and add to tea mixture. Add flour and mix well. Pour into prepared tin.
    4. Bake for 45 minutes. Test if the loaf cake is cooked by inserting a skewer into the middle and checking if it comes out clean. Turn out onto a wire rack to cool. Enjoy!
